This is the easiest, fastest, moist cake recipe you'll ever make.
And YUMMY too!
Fruit Cocktail Cake
Ingredients:2 cups flour 2 tsp. soda
1 1/2 cups sugar 1/4 tsp. salt
2 cups fruit cocktail and juice 2 eggs
Beat all together and then add fruit. Bake in 350* oven for 30 to 35 minutes in 2 -8" round cake pan or 9 x 13 pan.
Frosting:
3/4 cup sugar 1 tsp. vanilla
3/4 cup evaporated can milk 1/2 cup butter
1 cup coconut 1 cup walnuts or pecans, chopped (your preference)
Boil about 7 minutes until thick. Add coconut and nuts. Pour over cake while frosting is hot.
This is a moist and yummy cake anytime of the year. but it's a fun spring time cake for a change.
This cake literally took me 5 minutes to make and then baking time. I made the frosting while the cake was baking and frosted it. I let the frosting sit up just a few minutes so it's a little thicker.
I used walnuts in my frosting, but either is good.

My version is similar, but before I add the cake batter to the pan, I melt some butter and spread it around the pan and then add 1/2 - 3/4 cup walnuts. Then I pour the batter over and bake as above. For the topping, I do not add coconut, and of course, the nuts are already baked in.

I have seen a lot of cake flavors, I have never seen this kind until now. It does sound really good and I love fruit on top of cake, so why not in it too?? :)

I vaguely remember a fruit cocktail cake recipe from years ago, but I don't think it looked as delicious or easy as this one. Otherwise I would have kept it.

Yep - this is a wonderful cake, I can see how moist it is. I'd love to try it. Although I will have to change the topping (no one in my family likes coconut....)
