Reuben Loaf

This is a great meal for

Saint Patrick's Day or anytime of the year!

You get your corn beef and cabbage all in one.
 
I got this recipe from one of my dearest friends, Annette Priddis,  many years ago.

French Bread Recipe
 
Ingredients
3 cups  flour                                         4 tsp. sugar
1 1/4 cups hot water                            2 Tbs. butter
 1 pkg. yeast                                           1 1/2 tsp. salt
 
Add butter to hot water. Beat  in 1 cup flour, salt, sugar, undissolved yeast. Beat in second cup of flour (with electric beaters). Let dough rest 10 min,, stir 100 strokes. Repeat this set 5 more times. Turn onto heavily floured board and mold into 1 large loaf. Cover and let rise till doubled.
 
Now Let’s Make It Into A Reuben Loaf:
 
Ingredients
 
          Thousand Island Dressing              2 TBSP. melted butter
16 oz jar Sauerkraut (drained)        Caraway seeds
           1 lb. sliced Swiss cheese               1 lb. sliced corn beef 
          
On the floured surface, roll out the dough. Spread a generous amount of Thousand Island Dressing in the center of the dough.  Then place a layer of meat down the center,  a layer of cheese, then a layer of sauerkraut. I like to add a little more dressing at this point.

Make diagonal cuts down one side of the dough, then the other.
 Now your going to criss-cross these stripes over, fold the ends in. (see photo)
Brush butter across the top and sprinkle with caraway seeds.

Bake in 450* oven for 25-30 minutes.
Let stand for 5 minutes then slice and serve.

  1. I LOVE Corned Beef Brisket, however my hubby do not. Will have to have one and invite my Brother over, who also loves Corned Beef. Your Reuben looks amazing Wanda Ann.

    1. You will have to try it Cindy, he might like this better than a brisket. Have the deli slice the meat very thin, as thin as they can get it. It makes a difference for those that aren't sure about corn beef. And with all the other yumminess going on, he'll like it.(I hope)let me know!

  3. This looks absolutely wonderful! My mom used to make cabbage and corn beef with broth that I loved to eat. It was a very humble meal, but delicious. The only corn beef I've seen here in South Africa (but I've only ever lived in the towns, not the cities, so there is less selection) is called corned beef and it's in a tin, not very appetizing and it doesn't taste the same.

      Thank you, I have never used french bread but you could might not be quite the same as it all cooks up together with the bread. But it would still be good. You could try like Rhodes frozen bread!
      I am so blessed to be driving with my hubby and yes it does tend to keep you close, you have to be under foot 24/7 so you better like each other :-) We have a lot of fun and talk a lot.

My husband hates corned beef and cabbage (one of my favorites) and he cannot stand to have cabbage cooking in the house so this would be the perfect compromise for us! He wouldn't smell it and I could have my beloved dish. Thanks!!

  20. What an excellent recipe! We love corned beef, but we love Reubens, too. This will be a great way to use the leftover corned beef. I even have some homemade Thousand Island Dressing and sauerkraut I can use. Thanks for sharing this!

  25. Made this yesterday - SO GREAT. I did look up a recipe for french bread I could let mix in the bread maker... and I used raw cabbage because I didn't read the recipe in advance haha - but it was still great and was a big hit!! We cut it up like an appetizer :)
