Onion rings in batter is a great snack for beer and not only.

Onion rings:
- Repeated onions – 3-5 pcs. (large)
- Kefir – if necessary (0.5-1 spoons)

Onion rings in batter – seductive and incredibly delicious snack. In addition, it is very simple and easy to prepare.
Wrapped in a fluffy coat of batter, onion rings are fried to golden color and crispy crust. In just a few minutes you get a seductive contrast of pleasantly crispy golden crust and delicate juicy onion pulp. A simple, but incredibly delicious combination!
If you are told that this dish has many subtleties and secrets of cooking – don’t believe it! There is only one secret – the right batter! And I want to share with you today the recipe of such a proper thick batter. At the same time, I will tell you how to prepare another spectacular and delicious version of the onion snack – let’s prepare the famous “onion flower”. Shall we start?!

Peel onion from the peel and cut into rings about 0.5 centimeters thick. Divide the resulting onion slices into individual rings.
If time permits – lay out the onion rings in wide layers. Fill with kefir in such an amount that the rings are completely immersed in kefir.
Add a few pinches of ground black pepper and salt to taste. Place the rings in the fridge for at least 1.5-2 hours, or preferably overnight. If there is no time, this step can be skipped, but the pickled rings taste gentle and slightly more delicious.
To prepare the batter: in a bowl break the chicken egg, add the milk and whisk for a few minutes until a homogeneous mixture is obtained.
Then, stirring, gradually add wheat flour, spices and corn starch. And stir everything thoroughly so that there are no lumps left.
In addition to the batter, prepare two more containers – with flour and breadcrumbs (I have homemade “Panko”). You can also cook the rings without breadcrumbs – this moment is at your discretion.
Heat the vegetable oil very well. If you have a cooking thermometer – the temperature should be about 190 degrees.
Take turns dipping a ring of onions in flour, batter and breadcrumbs. Bloodscotch should turn out to be quite thick and envelop the ring a dense layer. If necessary, you can add a little more flour and starch, until you get the desired thickness.
Place the rings in heated vegetable oil and fry 1-2 minutes on one side. When the rings brown – turn them over and fry until golden on the other side (about 1-2 minutes more).
Place the finished onion rings in the batter for a few seconds on a paper towel to soak up the excess oil, and then serve to the table.
Now let’s prepare another popular onion snack – “onion flower”.

To prepare an appetizer, select a large head of onion. Cut off the top of the head, leaving the bottom in one piece.
Place the bulb with the cut down and, stepping back a little from the bottom, make 4 cuts, trying to cut the bulb to the core. Each resulting quarter of the bulb, cut in half, and then repeat the process again 1-2 times – as far as the size of the bulb allows.
Turn the bulb over and carefully divide the resulting petals (see the recipe video for more details).
In a bowl measure the milk, add 2 eggs and whisk until a homogeneous mixture is obtained. Mix the flour with the spices. Gently bundle the onion flower in the flour, trying to make sure that all the petals are covered with flour.
Dip the flower in egg and milk blob with the petals up. Then turn the petals down, take out of the batter and shake slightly to get rid of excess liquid droplets.
Pan the flower in flour again. Gently separating the leaves, sprinkle the flower with flour on all sides.
Shake off the excess flour and place the flower in the freezer for at least 1 hour, with the petals upwards.

Then gently, using a spatula or other improvised tools, dip the frozen flower in hot vegetable oil with petals down. It is desirable that the oil was so much that the flower can swim in it without touching the bottom of the tank.
Fry the onion flower for 2-3 minutes on one side, and then turn it over and fry for another 2-3 minutes on the other side, until golden brown. Place the flower on a paper towel for a few seconds to soak up the excess oil, and then serve.

Serve a hot snack, with sauce to taste. If desired, both the rings and the flower can be splashed with lemon juice. Bon appetite!

P.S. I prepare both snack variations based on the same mixture of eggs and milk. First, I mix 2 eggs with milk and pannish “onion flowers”. Then I add flour, starch, spices to the rest of the egg and milk mixture and prepare a batter for onion rings.
